for the last month i’ve been meal prepping and cooking one new recipe for dinner per week. i try to incorporate 2 vegetables per meal, and lately i’ve been on the carrots and broccoli wave. i’ve never been a big fan of veggies, specifically broccoli, but lately it’s been hittin sum'n different. because i am impatient, i put the broccoli and the carrots in a big bowl with a soaked paper towel on top in the microwave for 2 minutes. after, i combine them with my carb (usually quinoa or rice) and my protein. i eat one serving fresh, then i rubbermaid the rest. it’s been good for my health and for my pockets.
not only am i taking a liking to cooking, i’m also taking a liking to veggies, too.
who would’ve thought?
